So tonight I made chicken enchilada soup and it was delicious. BOTH of my children ate seconds!!!! That don’t happen often. This mom was over the moon about it. Seriously, if you only knew how picky my children are, you would totally understand. So here is the recipe if you would like to try. Its very simple….I actually made shredded chicken in the crockpot last night for quesadillas and I had some leftover so tossed it into this soup for a quick weekend dinner.
You will need:
1 Great Value Enchilada Sauce Packet
1 -8 oz tomato sauce
1.5 cups of water
1 Can of black beans
1 can of dark kidney beans
1 can of mild rotel
2 -3 tablespoons of taco sauce
1 lb of shredded chicken (cooked)
Directions- Just blend the first 3 items together really good and turn the heat on. Then add the rest. Cook it on the stove till the beans are good and tender. Top with Shredded Cheese and Tortilla chips or whatever your favorite toppings are. ENJOY!!!
